Ingredients
- 2 lb. chicken breast
- 2 Tablespoons Tarragon
- 1 Fuji Apple (cut in cubes)
- 1 small pack of Almond Slivers (toasted)
- 1/2 red onion, chopped finely
- 2 celery stalks, thinly sliced
- 1 teaspoon mild curry powder
- 1 1/2 teaspoon Lazy Texan Seasoning
- Mayonaise (enough to blend)
Directions
Boil chicken with the tarragon in enough water to cover the chicken. When done, cook chicken and cube into small pieces. Mix all ingredients with chicken and chill.
You can serve with crackers, as a sandwich, or stuffing in an avocado half. You can also garnish with a pineapple spear.
