Lazy Texan Dr. Pepper BBQ Brisket

Ingredients:

  • 3-4 pound brisket, trimmed
  • Large onion, slices
  • 2 cups Dr. Pepper
  • 1 cup BBQ sauce (your choice)
  • Lazy Texan Seasoning

Directions:

Rinse the brisket well and lay on a plastic cutting board.  Rub Lazy Texan Seasoning heavily onto both sides of the brisket.  Put the brisket into a large glass casserole dish (avoid metal as it could affect the desired taste).  Pour 2 cups of Dr. Pepper into the pan and cover.  Allow to sit in refrigerator for at least 1 hour; or up to 3-4 hours.

Cover bottom of the crock pot with sliced onion.  Lay the brisket on top of the onions.  With the Dr. Pepper that is remaining in the glass dish, add 1 cup of BBQ sauce and stir well.  Pour the mixture over the brisket and onions.  Cook in the crock-pot on high for 5-6 hours.

The brisket is going to be very tender and falling apart.  Using forks, separate into pieces for sandwiches and tacos.

White Chili

Ingredients:

  • 2 lbs. chicken thighs (boneless, skinless)
  • 3 cans Great Northern Beans
  • 1 Can cream style corn
  • 1 can whole kernel corn
  • 1 can diced tomatoes
  • ½ cup sour cream
  • 2 cups chicken broth
  • ½ red onion, chopped
  • ¼ tsp. cumin
  • 1 Lazy Texan Jalapeno Dip (or Salsa)

Directions:

Put chicken, tomatoes, spices, broth, and corn in crock pot on low of 8 hours.  Take chicken out and shred, then return to crock pot.  Add 2 cans drained and rinsed northern beans.  Take the other can, drained and rinsed, and puree or mash.  Add to crock pot.  Add sour cream and cook for another 30 minutes to an hour.  Serve with a dollop of sour cream on top, and serve with tortilla chips.

Chunky Potato Soup

Ingredients:

  • 3 medium potatoes
  • 2 Tbsps. Lazy Texan Seasoning
  • 2 cups water
  • 3 cups milk
  • 1 small onion
  • 1/2 Tsp sugar
  • 3 Tbs. butter
  • 1 cup shredded cheese
  • 3 Tbs. flour
  • 1 to 1 ½ cup cubed ham or link sausage

Directions:

Peel potatoes and cut into 1-inch cubes. Bring water to boil in a large sauce pan. Add potatoes and cook until tender. Drain potatoes and set aside the potatoes, but save the liquid. Measure 1 cup of the cooking liquid, adding water if necessary.

Peel and finely chop the onion. Melt butter in saucepan over low-medium heat. Add onion to the melted butter; cook, stirring frequently, until onion is tender but not brown. Add flour to butter and onions as well as the Lazy Texan Seasoning and stir together. Gradually add potatoes, reserved 1 cup cooking liquid, milk and sugar to onion mixture in sauce pan. Stir well. Add cheese and ham or sausage. Simmer over low heat about 30 minutes, stirring frequently.

Lazy Texan Crab-Stuffed Mushroom Caps

Ingredients:

  • 25 large fresh mushrooms, washed and drained
  • 1 bunch of green onions, finely chopped
  • ¼ bunch parsley, finely chopped
  • ½ cup bread crumbs
  • 1 lb of lump white crab meat
  • ½ cup butter, melted
  • 2 teaspoons Lazy Texan Seasoning
  • Grated parmesan cheese

Instructions:

Remove stems from mushrooms and set caps aside. Chop stems and combine with onion, parsley, bread crumbs, crab, melted butter and Lazy Texan Seasoning. Fill each mushroom cap with the mixture, rounding the top on each one. Sprinkle with grated parmesan cheese. Arrange on greased cookie sheet and bake in 350 degree oven for 15-20 minutes or until brown on top.

Spinach Ham Cheese Quiche

Ingredients:

  • 5 eggs
  • 5 slices deli sandwich ham
  • ½ cup milk
  • ¾ cup sour cream
  • 1 package Lazy Texan Spinach dip
  • 1 deep dish pie shell
  • Shredded Swiss cheese

Directions:

Whisk together eggs, sour cream, milk, and one package of Lazy Texan Spinach dip. Cover bottom of deep dish pie shell with deli ham and shredded cheese. Pour egg mixture into pie shell. Bake at 375 degrees for approximately 45 minutes or until set and nicely brown on top.
