Lazy Texan Butternut Squash Casserole

Ingredients

  • 2 large butternut squash
  • 4 eggs, lightly beaten
  • 1/4 teaspoon nutmeg
  • 1 Lazy Texan Onion Dip
  • 4 tablespoons butter
  • 1/4 cup almond slivers

Directions

Cut squash in half, remove seeds.  Set the cut side down in a buttered glass baking pan with surrounded with 1/2 inch of water.  Bake at 350 degrees until tender, about 1 hour.

Scoop insides of squash into a food processor or blender and mix until smooth.  Add eggs, nutmeg, and 1 Lazy Texan Onion Dip.  Beat until well blended and smooth texture.  Pour into a casserole dish.  Melt 4 tablespoons of butter and pour over the top.  Sprinkle on almond slivers.  Bake at 350 degrees for about 30 minutes.

Myra’s Lazy Texan Chicken Curry Salad

Ingredients

  • 2 lb. chicken breast
  • 2 Tablespoons Tarragon
  • 1 Fuji Apple (cut in cubes)
  • 1 small pack of Almond Slivers (toasted)
  • 1/2 red onion, chopped finely
  • 2 celery stalks, thinly sliced
  • 1 teaspoon mild curry powder
  • 1 1/2 teaspoon Lazy Texan Seasoning
  • Mayonaise (enough to blend)

Directions

Boil chicken with the tarragon in enough water to cover the chicken.  When done, cook chicken and cube into small pieces.  Mix all ingredients with chicken and chill.

You can serve with crackers, as a sandwich, or stuffing in an avocado half.  You can also garnish with a pineapple spear.

Lazy Texan Crock Pot Potato Soup

Ingredients

  • 1 32 oz. Chicken Broth
  • 1 32 oz. pack of Frozen Diced Hash Browns
  • 1 can Cream of Chicken Soup
  • 1 pack of Cream Cheese (8 oz.)
  • 1 Lazy Texan Onion Dip
  • 3 oz. real bacon bits
  • 1 cup shredded cheddar cheese

Directions

Put the potatoes in crockpot.  Add in chicken broth, cream of chicken soup, bacon bits and Lazy Texan Onion Dip.  Mix well.  Cook on low for 8 hours or high for 6 hours.

An hour before serving, cut the cream cheese in small cubes.  Stir the cream cheese into the crockpot.  Stir a few times thought out the hour before servicing.  Top with cheddar cheese and some additional bacon bits.

Black Bean and Corn Salad

Ingredients:

  • 1 can reduced sodium Black Beans (drained and rinsed)
  • 1 can whole kernel corn (drained)
  • 1 cup chopped avocado
  • ½ cup chopped red onion
  • 2 Tablespoon Lazy Texan Seasoning
  • 1 cup fresh cilantro (optional)
  • 2 Tablespoons lime juice

Directions:

Mix all ingredients except for avocado.  Add avocado just before serving.

Jalapeno Cornbread Casserole

Ingredients

  • 1 lb. ground meat
  • ¼ cup chopped onion
  • 2 packs Lazy Texan Jalapeno Dip (**see note below for other choices)
  • 2 boxes (8.5 oz.) Jiffy cornbread mix
  • 2 cups cream style corn
  • 2/3 cup milk
  • Shredded cheddar cheese (1-2 cups)
  • 2 eggs beaten

Directions:

Preheat oven to 425 degrees.

Brown ground beef with onion, draining off excess fat.

Mix both packs of seasoning into dry cornbread mix.

Combine eggs, 1 cup of cream style corn, and milk into cornbread mix.  Stir just until dry ingredients are moistened.  Pour ½ of the batter into a greased 9” square pan.  Top with beef mixture.  Layer shredded cheese across the top.  Spread the other cup of cream style corn across the top.  Then pour remaining batter on top.  Bake for 25-30 minutes.

Options:

1 Jalapeno and 1 Onion

2 Onion
