Lazy Texan Jalapeno Jerky Dip

Ingredients:

1 Lazy Texan Jalapeno Dip

8 oz. block of cream cheese

16 oz. of sour cream

1 cup (or more) chopped beef jerky

Directions:

Let the cream cheese come to room temperature.  Mix all of the ingredients together.  Let sit one hour before serving.

Hint:  easiest way to get a cup of jerky is to use scissors to cut into pieces.

Lazy Texan Baked Beans

Ingredients:

  • 2 28 oz cans of pork and beans
  • 1 large onion, chopped
  • 1 1/2 Tbs yellow mustard
  • 2 Tbs Worcestershire Sauce
  • 1 1/2 Tbs Lazy Texan Seasoning
  • 1/2 Cup Brown Sugar
  • 2 Tbs of butter or bacon grease
  • 4 strips of thick sliced bacon (uncooked)

Directions:

Sauté the chopped onion and 1/2 Tbs of Lazy Texan Seasoning in the butter or bacon grease. Add beans, mustard, Worcestershire sauce, brown sugar, and the remaining 1 Tbs of Lazy Texan Seasoning. Stir well. Spray a 9″x13″ casserole dish with a nonstick spray. Pour in the mixture and top with the bacon strips. Bake at 350 degrees for approximately 45 minutes or until the bacon on top is crisp.

Lazy Texan Fried Fish

Ingredients:

10 large filets (catfish, tilapia, or any other choice)

3 cups yellow corn meal

1 cup all-purpose flour

2 Tablespoons Lazy Texan Seasoning

4 cups of peanut oil

Directions:

Sprinkle filets on each side with a light cover of Lazy Texan Seasoning.  Combine corn meal, flour, and 2 tablespoons of Lazy Texan Seasoning in a gallon ziploc bag.  Put filets in one or two at a time and seal.  Shake to coat both sides of filet well with the dry mixture.

Heat oil in skillet or fryer (like a deep cast iron skillet).  Oil should be 350 degrees (check with thermometer if you need to).  Fry until crispy and brown on both sides.

Lazy Texan Potato Casserole

Ingredients:

1 (2 lb.) bag of frozen hash brown potatoes (cube-style)

1 stick margarine or butter

1 pint of sour cream

1 can Cream of Mushroom soup

1 can Cream of Chicken soup

1 Lazy Texan Onion Dip

2 cups grated cheddar cheese

1 pack of bacon pieces

Directions:

Mix butter, sour cream, soups, and Lazy Texan Onion Dip together in a sauce pan over low heat (just enough to melt the butter).

In a large bowl, combine this mixture, potatoes, grated cheese and bacon pieces.  Put in greased 9″ x13″ casserole dish.  Cover with foil.  Bake on 350 degrees for 1 hours.  Remove foil and bake for 30 minutes more or until bubbling in the middle.

Lazy Texan Trash

Mix and divide between two roaster pans:

a box of Cherrios

a box of Corn Chex

a box of Rice Chex

a box of Wheat Chex

a box of prezels

a can of dry roasted peanuts, no salt

Sprinkle 1 teaspoon of garlic salt and 2 teaspoons of Lazy Texan Seasoning over each pan.

In a sauce pan, heat:

2 1/2 sticks of oleo

1 teaspoon of Tabasco

2 tablespoons of Worcestershire Sauce.

Divide and pour the liquid over the dry mix.

Bake at 225 degrees for 2 1/2 hours, stirring every 20-30 minutes.  Cool and serve.
